Do you have to wash your fresh eggs? Do they need to be refrigerated? These are some of the questions I get most often concerning the handling of eggs from our suburban coop. The fact is that the nature God given coating that is on an egg provides an amazing amount of protection and the less we do to mess that up the better we are! There is a big difference between the eggs you pull right out from under one of your backyard chickens and one that you purchase at the store, a BIG difference. The chickens that you raise, feed, and take care of are no doubt (well if you take good care of them) healthier than those found crammed in some giant factory farm cage somewhere. The eggs from the factory farms are immediately washed and then packed and refrigerated to prevent bacteria from growing in those eggs. This process takes the natural protection away from the eggs and exposes all of the tiny pores of the shell to outside contaminants which makes refrigeration a must. However, with your farm fresh eggs this does not need to be the case. When you collect your own eggs they can be cleaned and put into the fridge and stored for several weeks this way with no problem but it is largely not necessary. The coating provided by the chicken is the best defense from bacterial growth in the first place. Washing that coating off is the equivalent to pulling of the eggs protective respirator in a disease infested world. It won't survive long without the protection given naturally by good old' mama hen. We generally collect our eggs mid-morning and then bring them in and place them in a dish or cartoon near the sink. We do not wash them right away or refrigerate them. They just sit right there until needed by one of the SSLMom's awesome recipes or for one of our famous breakfast egg sandwiches. Once we are ready to use an egg we simply rinse it off with warm water (don't want to accidentally drop poopy eggs shells in breakfast do you?) and throw it in the skillet or mixer. We have left the eggs at room temperature like this for over two weeks at times (although I would probably not let them sit much longer than that). If we start to get a stockpile of eggs that we cannot eat fast enough then we may wash off a batch and put them in saved egg cartoons for friends or family. We try not to give away eggs with chicken mess still on them:) The bottom line here is that the natural way the chicken eggs was made by our creator allows for us to store them without worry of bacterial infection at room temperature without the invention of the refrigerator. How do you think people use to store them for the thousands of years before the refrigerator? There are also other ways for long term storage at room temperature that I will not get into here today but may talk more about on a later discussion. So... You've decided to get some laying hens... Now what do you do with your eggs to be sure they are fresh and ready to be stored. Option 1. You can keep clean fresh unwashed eggs sitting on the counter till your ready to use them. ( always crack one egg at a time in a separate bowl before adding to recipes or in the pan to fry ) Option 2. Wash and do the FLOAT TEST! You can wash with warm (not hot) water to see just how fresh they are. You can sanitize eggs with a touch of bleach added to the water. OR you could add a touch vinegar to the water when washing. Here in the video I'm showing you how I wash & float test my eggs. This process ensures you don't crack open a bad egg (it really stinks)... Our chickens are out on pasture where they are moved frequently onto a new paddock of fresh grass. We make sure to keep the nesting boxes clean as well as close up the roosts at night so they chickens can't sleep in the nest boxes. This makes for super clean eggs that are safe to keep out on your counter for weeks at a time. Follow along and see how we manage our pastured egg layers. We practice sustainable agriculture on our farm by using multi-species to build soil and fertilize the ground. The take-away here is to keep your coop and your chicken's nesting boxes as clean as you can. You don't want to have to spend any time washing eggs. There's no value added there, and you could argue there's value taken away from handling the egg. If you keep the nesting boxes clean then your eggs should stay cleaner and you have to do less work. I use hay in my nesting boxes and I keep spare hay on hand for when the chickens make it dirty. It's so worth it! If you have to clean your eggs, which even I have to clean mine at times, then using running water, soap without any dyes or perfumes, and a clean cloth or towel is the way to go. If you're at a small scale you don't need a fancy egg-washer, you just have to keep your nesting boxes clean and take care with the eggs that end up with poop on them. 🤍 🤍 🤍

Part 2 - What if you’ve got a lot of dirty eggs? Farmers should examine their management practices carefully. High numbers of dirty eggs likely mean there is a problem in the barn. It’s best to reduce the need for washing by reducing the number of dirty eggs. We washed dirty eggs using 11 methods commonly used in Alberta. After washing, we counted the number of bacterial on the egg shells. Once an egg was cleaned, we counted the bacteria on the shell and ranked them from best to worst in comparison to a clean egg. Some treatments resulted in eggs that had bacterial counts lower than the untouched clean eggs. Sandpaper, rough sponges or soaking should not be used to clean hatching eggs since they did not result in microbial loads less than the untouched clean eggs. Initial and recurring costs, the time involved and the training time are all considerations in choosing a cleaning method for your farm. Balancing cost, time requirements, and effectiveness will assist in choosing a method to clean your dirty hatching eggs.

Part 1 - Eggs arrive in the service area from the barn as either clean, settable, dirty and un-settable. A clean egg has no visible dirt; A settable egg has dirt less than the size of a dime; A dirty egg has dirt less than a quarter, but more than a dime, and An un-settable egg has more than a quarter sized dirt. We counted the number of microbes (bacteria) on each egg, exactly as they came off the belt. They were not cleaned in any way. We found that even clean eggs had some bacteria on them – but there was no significant difference in the amount of bacteria on clean eggs compared to settable eggs. If you don’t have to wash eggs, don’t. Since there is no difference between these two categories, they should be shipped as is.

Introducing the EGG-GO Egg Washing Machine! We designed and built this machine for our 1,100 bird farm to wash eggs from our chickens and ducks. We tried the air bubbler in a bucket design. That was put in a corner, they do not work on our pastured eggs. We tried a Gibson Egg Washer as well at $1,875. That was put in a corner as well. Starting from scratch, what we wanted was something that we could vary the feed rate of the eggs, depending on if there is one or two people operating the washer. A machine that is user serviceable with parts available if and when needed. We wanted a machine with a built in water heater to maintain the recommended temperature, something that even a $6,000 entry level washer does not have. The brushes are commercial duty with food grade nylon bristles. How long do they last? Ours has been running over a year now with no signs of wear. The two independent gear motors allow flexibility for various levels of cleaning. In this video, the feed rate is approximately 650 eggs per hour, as you can see, is perfectly comfortable for one person. When we both run the washer, we can consistently push 1000+ eggs per hour. The EGG-GO machine is capable of a speed up to 1,400 eggs per hour. The idea is to cut down the countless hours of hand washing the eggs. With our size farm, we have reduced our labor by nearly 10 hours a week! You do the math for yourself. When we value our labor at $10/hr, the return on the investment in an EGG-GO Egg Washer is less than 5 months! What would you do with an extra 40 hours a month?

Our eggs are washed the day they are laid. They are washed with warm water and Seventh generation Dishwashing powder which was the only material acceptable with our organic certifier and the health department.
